There are plenty of servers but they are normally empty, now, all that is seen played is bot Apocalypse, classes TLMS, and rage roboenza. I would like to ask the community, what game mode(s) would they like to see hosted more often?

Also please tell me if I'm missing any

Deathmatch, just plain old Deathmatch. It's what I enjoy the most (and map for).

CTF and Team LMS is what I'd like to see more of.

I'm helping with two mods that should be able to supplant CTF a bit once they're released. Right now, however, CTF is great with Qbox mode because the first seven CTF maps have abysmal weapon and item placements. (I'm hoping Qbox will get updated for CTF.) Team LMS has always been the most standardized mode and that's always a blast. Some things about the other modes:

-Chaos and Instagib are "novelty" modes. They might be interesting every once in a while but they'll wear out fast.
-1CTF and Terminator are flat out bad modes as they are now. I'd advise against hosting them.
-Possession is broken as it now. Myroc refuses to release the latest possession fix (Powered Up v1d), so it's being worked on in a separate mod.

Personally I don't see the appeal of slapping classes on top of non-vanilla game modes.

I haven't seen too much CSCC servers and most of these are mine. And they lag.

Personally, I would like to see more Screw Scramble, Classic Roboenza, Chaos Generator and CTF.

I have played TDM and classes TLMS enough even though I love em, but CTF and especially Chaos Generator need a lot more love.

Seriously Chaos Generator is a brilliant mod that is very fun and unserious. It makes MM8BDM a whole lot more crazy and I miss it greatly.
